Instructions
Dice your onions, grate the carrots and finely chop the garlic.
Add olive oil to a large saucepan, stock pot or cauldron and place over a medium heat to warm.
Add your onions and cook gently for around 10-15 minutes until translucent.
Next add the grated carrot, stir through the onions and cook for around 5 minutes.
Add the garlic, mix through and cook for 2 minutes.
Tip in the 2 tins of tomatoes. Fill one of the empty tins with water and add that to your sauce.
Add the rosemary, bay leaves, tomato puree, sugar, salt and pepper, worchestershiresauce, and the dried herbs. (Magical Tip: as you add the ingredients, say why you are adding them, according to their magical properties.) Stir everything together, turn up the heat and bring the mixture to a boil.
Once your sauce is boiling, reduce to a simmer and leave it to reduce for around 20-30 minutes.
If you like a chunky sauce, you can simply remove the rosemary sprigs and bay leaves and serve as required. For a smoother sauce you can blend it up.
Notes
This recipe makes around 1.2 litres of tomato sauce, which you can store in the fridge for up to 3 days, or portion it up and put it in your freezer, where it should keep for 4 to 6 months.
