Chia seed pudding pots are one of my favourite, quick and easy make-ahead breakfasts. They do need to be made the night before, although they really don’t take a lot of time, so you can make a few portions up in advance ready for the week ahead then just top them with whatever you fancy.
The basic recipe is 1 tablespoon of chia seeds, 1 teaspoon of honey or maple syrup and 100ml of milk. Just mix it up in a small bowl or jar and leave it in the fridge overnight to thicken. In the morning just add whatever toppings you’d like, such as frozen berries, fruit or yoghurt.
Here are some of my favourite variations to get you started. Each recipe below makes one serving, you can easily multiply it up to make bigger quantities if required.

Forest Fruit Chia Pudding Pot
- 1 tablespoon Chia Seeds
- 1 teaspoon runny Honey
- 100ml Coconut Milk
- Handful of frozen Forest Fruit
- Raspberry Yoghurt
As above, mix together the Chia seeds, honey and coconut milk and leave to thicken overnight. In the morning top with yoghurt and your frozen fruit.

Chocolate Orange Chia Pudding Pot
This one is richer and could quite easily pass as a dessert.
- 1 tablespoon Chia Seeds
- 1 teaspoon Maple Syrup
- 100ml milk (I used Semi-Skimmed)
- 1/2 tsp Orange Extract
- 1 tablespoon Cocoa Poweder
- Tinned Mandarins
- Whipped cream (optional)
- Grated chocolate (optional)
Mix together the Chia Seeds, maple syrup, milk, orange extract and cocoa powder, place in the fridge overnight to thicken. In the morning (or when ready to serve) place some of the tinned mandarins on top. For dessert, to make it a little extra special, top with some whipped cream and grated chocolate.

Tropical Fruit Chia Pudding Pot
- 1 tablespoon Chia Seeds
- 1 teaspoon honey, plus extra to drizzle
- 100ml Coconut Milk
- 1/2 tsp Vanilla Extract
- 1 Kiwi Fruit
- 1/4 Melon
Mix the Chia seeds, honey, coconut milk and Vanilla extract, place in the fridge overnight. In the morning, dice the Kiwi and Melon (save a little for garnish, if required) and place on top of the chia pudding. Drizzle with a little extra honey and serve.
Substitutions
These are just three of my favourite combinations, using my preferred milk choices. However, as far as I am aware, any milk can be substituted to suit your own preference or dietary needs.
