Whether it is the most important meal of the day or not, breakfast is one of the more controversial meals. Some go big, some grab and go, others just hit the coffee. I am a two cups of coffee type person, and something to eat mid morning.
I generally prefer a sweet over savoury breakfast, although I do enjoy how many different ways you can cook an egg. But that’s for another post. If I am feeling particularly organised, I’ll prepare a chia seed pudding the night before and we’ll often make more often with pancakes or french toast on a weekend. However, breakfast is not a meal I particularly look forward to or make much effort with – except for the coffee, of course!
A few years ago, I challenged myself to eat a different breakfast every morning for 30 days, so, as it’s June, I thought I’d share my favourite, more Summery breakfasts to give you 2 weeks of breakfast ideas for the Summer.
Mashed Avocado on Toasted Bagel – an oldie, but a goodie. It’s pretty self-explanatory, and can be quick to make. Toast your bagel, smother with butter and mash up your avocado. Why not add some salt and pepper, lime juice or chilli to make it a bit more fancy?

Banana Split – a little twist on a favourite dessert. I can’t believe I hadn’t tried this sooner. Split a banana down the middle and fill with yoghurt. If you remember, put a pot of yoghurt in the freezer the night before for a more authentic banana split. Top with your favourite berries and fruit, add honey or maple syrup and a sprinkle of chia seeds. There are so many options, and it would make a fantastic breakfast table idea.

Buttermilk Pancakes – whether you buy them ready made, have time to make them yourself or make a batch and freeze, buttermilk or American pancakes are an easy go to breakfast. Warm up and serve lemon and sugar, or your favourite toppings.

Cereal with Fruit – super quick and easy, plus it includes one of your 5-a-day. Bring out your inner child with a bowl of Rice Krispies or dress up your Bran Flakes with some banana and berries.

Chia Pudding – Chia pudding pots are an ideal make-ahead breakfast to grab in the morning, and the possibilities are endless. For some recipe ideas check out 3 ways with Chia Seed Pudding Pots.

Continental Style Breakfast – or ‘girl breakfast’ as I’ve heard it called. Pick up your plate and grab some bits of cheese, meats, yoghurt & fruit and pretend you’re on holiday with a buffet style breakfast.

Grapefruit & Mint – Cut a grapefruit in half, sprinkle with a little sugar and chopped mint.

Crumpets with Lemon Curd – if you usually add butter to your crumpets, why not try this for a tasty, tangy breakfast?

Melon Bowl – Cut a small melon in half, and gently slice through the fruit without cutting through the skin. Fill with yoghurt and top with your favourite toppings.

Poached Egg on Toast – this is my favourite way to eat eggs, so it had to make the list.

Raspberry Jam on Sourdough Toast – another simple one, but with a really good sourdough bread and a delicious raspberry jam or conserve this is a delicious breakfast.

Croissant with Ham & Cheese – this one was from Little Valley Bakery in Swansea. Simply grab and go.

Yoghurt & Granola Pot – add your favourite yoghurt and granola to a bowl or jar and you are good to go.

Berry Smoothie Bowl – simply blend together a banana with some frozen berries and pour into a bowl, for a creamy, almost frozen dessert type pudding. Once again, top with berries and chia seeds, there are so many possibilities.
